I am Professional Chef, trained in classical kitchen at Henley College of Further Education, Coventry. Culinary education continued in top hotels, Park Lane Hilton, London and Gleneagles, Scotland.
A career move into Country House Hotel, Pennyhill Park and Runnymede , Surrey followed by two years at the, then new to UK group, Ramada hotel in Reading. This led to placements at Scholteshof Restaurant with Rooms, Stevoort, Belgium under 2 Michelin Stared Chef Patron, Roger Souvereyns and De Bookedoorns and Hoefslag Michelin Stared Restaurants in the Netherlands. Returning to the UK in the late 1980’s as Executive Chef at the Ramada
Renaissance, Brighton.
I moved to Scotland, with my young family, to Farleyer House Hotel, Aberfeldy and after Chef Patron of 7 The Square, Aberfeldy. 2000, I was approached to join the opening of the City Inn, Glasgow.
Presently, I am Catering Manager at a top Independent Glasgow School.
Throughout my career, I have been inspired by the flavours of the world to enhance and complement my culinary skills.
Motivated by in the multicultural cuisine and curiosity in the cooking techniques of other chefs.
Within my present position, I create a variety of dishes to suit the dietary requirements and preferences with Halal, vegetarian, vegan and essential medical needs.
You learn to think differently and draw inspiration from a range of sources.
Food is about sustenance but also about pleasure and cooking and dining brings enjoyment .
The understanding of the discipline, history, geography and chemistry in the produce and cookery. The balance of ingredients enhances and compliment the flavour of the dish.
Passion for exploring the ingredients I use, understanding their history and qualities, how they interact with other ingredients, creating different tastes with similar produce. With a diverse selection of cookery books, multimedia sources and an accessibility to a plethora of ingredients , it is an exciting opportunity to experiment with new and familiar produce and recopies.
What will you be making?
In this cookery hands-on masterclass, I will be putting my knowledge and skills into
vegan inspired dishes of vegan lentil moussaka and vegan chocolate torte.
